MOTHER'S DAY

HAPPY MOTHER'S DAY

 LET ME SLEEP IN......



MAKE A SIMPLE BREAKFAST IN BED 'PICNIC"  
WE CAN SHARE 
Bacon, avocado omelet with pico de gallo

INGREDIENTS:
Pico de gallo
• 3 roma tomatoes, seeded and chopped
• 1 finely chopped red onion
• 2-3 jalapeno peppers, seeded and minced
• 2-3 tablespoons fresh lime juice
• 3-4 tablespoons chopped fresh cilantro
• Black pepper, to taste
• Salt, to taste
Omelet
• 4 large eggs
• 2 tablespoons water
• 1 tablespoon butter, divided
• 4 slices turkey bacon, cooked until crisp
• 1 avocado, pitted, peeled and cubed
• 1/3 cup grated Monterey Jack cheese
PREPARATION: In bowl, combine tomatoes, onion, jalapeno pepper, lime juice, cilantro, pepper and salt; mix well.
In separate bowl, combine eggs and water; whisk until blended.
Heat 1/2 tablespoon butter in a nonstick skillet over medium-high heat. When melted, pour in half of egg mixture. Tilt skillet so egg spreads evenly. Cook 1 minute. Top half of the omelet with half the bacon, half the avocado and half the cheese. Cook 1 minute.
Fold omelet over filling; transfer to plate and keep warm.
Repeat with remaining butter, egg and filling mixture for second omelet.
To serve, top with pico de gallo.
Makes 2 omelets.

1 shot of Amaretto
2 shots orange juice
Champagne 
Add amaretto and orange juice to a Champagne flute, then top off with Champagne. Garnish with half an orange wheel.
